Honey glazed snack mix recipe! Salty-sweet and crunchy delicious! Plus....
This is my all time favorite comfort food snack for IBS.
It’s fast and easy to make a big batch that keeps for the week.
Plus it’s crunchy sweet and salty, totally delicious, and all from pantry staples.
Even better - it’s a fantastic soluble fiber foundation, with no IBS triggers, very low fat, and no insoluble fiber.
No matter how touchy my gut this is a safe, stabilizing snack for IBS.
Honey Glazed Snack Mix
So addictive I make big batches of it for the afternoon munchies. You can easily double the recipe if you have a big enough bowl (and oven).
Makes 10 half-cup servings
3 tablespoons olive, canola, safflower or sunflower oil
1/4 cup honey (or maple syrup)
2 cups Corn Chex cereal (or Crispix Cereal)
2 cups Rice Chex cereal (or Crispix Cereal)
1 cup mini pretzels or thin pretzel sticks
In a small bowl stir together oil and honey (or maple syrup) until well blended. In a large bowl stir together cereals and pretzels, top with honey mixture, and stir until well combined.
Microwave on high for 3-6 minutes, stirring very well every 60-90 seconds, until cooked through. Microwave strengths vary widely, watch carefully so things don't burn.
Or, bake in oven at 250F for 45-50 minutes in a large roasting pan, stirring every 10-15 minutes. Watch carefully and stir often enough that it doesn’t burn.
Cool thoroughly before eating (waiting is the hard part). Then snack away!
It’s a safe snack mix for the whole week - in just minutes.
For an extra safety margin, have your snack with a cup of high volatile oil peppermint or fennel tea.
