I love summer, and Memorial Day weekend is always one of my favorite times of year. It feels like the threshold to my favorite season, weather, and foods.
I try to plan a summer food weekend, with grilling if the sun is out, or an indoor picnic if the sun is not.
I keep it fast and easy, and as always it’s a lot about simple substitutions - never deprivation.
My suggestions?
Start with the fun finger snacks - baked potato chips, baked corn chips, pretzels
Dip into mild salsas, homemade guacamole, ceviche
(skip the fried chips, sour cream dip, cheese dip, nachos)
Outside grilling? Go for veggie or low fat chicken/turkey dogs, bbq skinless chicken breasts, any seafood, grilled zucchini
(skip the hamburgers, hot dogs, ribs)
Potato salad? Go heavy on the peeled potatoes and light on the mayo, and add your Tummy Fiber right in for extra gut safety and bonus creaminess for the dressing.
For dessert?
Sorbets, fresh mangoes are in season, Smore’s with just a little square of dark chocolate (and slice a fresh banana in there as well, banana Smore’s are the best Smore’s!)
(skip the ice cream, cream pies)
